ELZORVAN Atelier — the cook's instruments
The Dozvuk does the week with edges to spare: forged blades with hardness and angle stated on the card, riveted walnut handles over full tangs, and a block that seats every knife edge-down and finger-safe.
The metal shop works the old sequence: copper spun to 2.5 millimetres and tinned by hand over open flame, cast iron poured and enamelled twice, blades forged, ground and honed to a stated angle. Every pan is weighed, every lid lapped to its pot, and every piece struck with the house mark only after the bench has cooked on its twin.

Care
Knives wash by hand, dry at once, and sleep in the block or on the magnet — never loose in a drawer. Wooden boards only; glass and stone are for pastry, not edges.
Hone weekly on the steel, sharpen seasonally on the stone, and the stated angle lasts a lifetime of dinners.

What steel are the knives?
Forged high-carbon stainless or true carbon steel, stated per suite with hardness and edge angle on the card. Handles are riveted walnut or oak; nothing is glued to hope.
Are the appliances repairable?
That is why we chose them: metal bodies, serviceable motors, and our bench stocking brushes, belts and gaskets for fifteen years. The card states service intervals like a good watch.
